Gluten Free Monster Cookies

The gluten free cookie you didn’t know you needed.

Between life and living, I haven't baked anything sweet in months. I decided to get back in the driver seat with a gluten free monster cookie recipe inspired by the Fit Mitten Kitchen. If you have an insatiable sweet tooth but also want to eat healthy, you're going to want to make this. As someone who will never pass up a cookie (or two), I am always on the look out for guilt free recipes that don't compromise on taste. I hit the jackpot with this one.

Ingredients

1 1/4 c gluten free quick quick cook oats
1/2 tsp Baking soda
1/4 tsp salt
1/4 c butter
1 egg
1/3 c brown sugar
3/4 c peanut butter1/4 c chocolate chips
1/2 c MMs

DIRECTIONS

👉Mix peanut butter, softened butter (super soft), and brown sugar for two minutes or until smooth. You can use a hand mixer or fork (I used the latter). Add vanilla and egg till combined.

👉Sprinkle in your previously mixed dry ingredients. Add mms and chocolate chips. Use a spatula to fold till combined.

👉Scoop small balls of dough onto oiled aluminum pan. This recipe made 20 small/medium sized cookies.

👉Press mms into the top of each cookie. Sprinkle with sea salt. Bake at 350 for 7-9 minutes depending on desired doneness.

👉Let cool 5 minutes. Enjoy!
