Two Easy Egg Recipes You Should Try This Week.
Eggs are a staple in my diet. I cannot resist a quick and healthy meal that takes 15 minutes or less to prepare. And if you know me, you know how I feel about my eggs. Some may even consider me an eggspert… see what I did there? Anyway, aside from being packed with protein and good fat, eggs contain all 9 amino acids (and pretty much go with everything). The average egg contains 77 calories, 5 grams of fat, and 6 grams of protein. Yum. They’re also full of choline, an essential nutrient that helps your liver, metabolism, and brain. When I purchase eggs, I prefer organic and pasture raised, as they are better for you AND the hens. But of course, feel free to purchase any type of eggs you like! Below you’ll find three of my go to morning scrambles that you can make in 15 minutes or less.
SWEET AND SAVORY SCRAMBLE
INGREDIENTS
2-3 eggs
1/4 zucchini, chopped
1 handful of spinach
1/4 tomato, chopped
Feta
1 banana, sliced
1 handful pomegranate seeds
Honey
Seasoning of choice
DIRECTIONS
1. Sauté chopped zucchini, tomatoes, and spinach in medium pan with oil oil over medium heat for 3-5 minutes.
2. Reduce to to low heat, add scrambled eggs and spices.
3. Fluff eggs 3-5 minutes or until desired consistency is reached.
4. Add sliced banana to plate. Top with pomegranate seeds and sprinkle with honey.TIP: Sprinkle with cinnamon for a twist of flavor.
5. Plate eggs. Top with Feta. Enjoy
Arugula Turkey Scramble
INGREDIENTS
2-3 eggs
2-3 slices of turkey (I like Applegate Naturals. Dairy, casein, gluten, and sugar free)
1 handful of arugula
4 cherry tomatoes cut in half
1 handful strawberries, sliced
1 handful blackberries
Seasoning of choice
DIRECTIONS
1. Add scramble eggs, and turkey slices to medium pan with olive oil over medium heat.
2. Fluff for 3-5 minutes, and reduce to low heat.
3. Add arugula and spices.
4. Cook an additional 3-5 minutes or until desired consistency is reached.
5. Plate fruit. Plate eggs and top with tomatoes.
6. Enjoy
